How do you prepare and drink Amazônia from a gourd?

Fill the gourd three-quarters full with loose-leaf Maté Amazônia, pre-moisten with water at 50°C, place the bombilla against the side, then pour water at 75–80°C. The mango and clementine aromas come fully into their own from the third infusion onwards — don't discard your maté after the first cup!
