Its Culture:

Mate is derived from Ilex paraguariensis, an evergreen tree in the holly family. Mainly cultivated in Latin America, it is the "green gold" of this continent!

In Argentina, "yerba mate" is the most consumed beverage, a true ritual of sharing and togetherness. An institute, a museum, and a national day are even dedicated to it.

Its Virtues

In just a few years, mate has found its place in Western culture due to its numerous benefits. It has become the go-to ally for athletes, students during block release, active workers, and people seeking energy or weight loss.

> Concentrated in caffeine* (less than coffee, but more than tea), mate is a stimulant both physically and cerebrally.

*Mate leaves are rich in mateine, a molecule identical to theine and caffeine, belonging to the methylxanthine family.

- It helps maintain long-term alertness, combat mental fatigue, and improve cognitive performance and memory.

- It offers an appetite-suppressing effect (increasing the sensation of satiety), an energy boost (stimulating fat burning and energy expenditure), and purifying properties (diuretic).

Mate can be drunk plain (its bitterness corrected with honey or sugar) or in a flavored recipe. In summer, the refreshing version of mate called “tereré” replaces hot water with fresh fruit juice or sparkling lemonade.

Its Preparation

Traditionally, mate is prepared in a calabash : a dried gourd that is hollowed out to form a vessel). But it can be prepared in any container of your choice. Modern calabashes, for example made of stainless steel or silicone, simplify the preparation and consumption of mate, while offering this vessel a longer lifespan and more features (like heat retention).

- Fill the calabash with mate up to ¾ full.

- Heat the water to 95°C.

- While the water is heating, add a little cold water to the calabash to moisten the mate.

- Then add the simmering water and let it infuse for 5 to 10 minutes.

Its Tasting

The calabash is traditionally associated with the bombilla. A kind of stainless steel straw equipped with a filter at its end, this prevents leaf residue during aspiration. This allows you to drink the mate directly from the calabash without having to filter the preparation.
