The Microbial Fermentation Process

Pu-erh leaves are spread in thick layers, moistened, and then covered with tarps. This stage takes place in a controlled environment with specific heat and humidity levels, lasting between 45 days and 3 months depending on the desired degree of fermentation.

This process relies on microbial fermentation involving bacteria and fungi. This allows for accelerated aging in high humidity, which creates pu-erh's distinctive flavor profile.
