CULTIVATION OF MATCHA
The cultivation of Japanese green tea matcha is carried out with great expertise. This is done in shaded conditions, protecting the tea plants from light using nylon tarps or canopies for three weeks before harvest. Limiting their sun exposure allows for:
- Slowing down photosynthesis and thus delaying the conversion of theine into tannins.
- Increasing the production of chlorophyll.
- Developing finer aromas, softening the taste of matcha, and producing a unique umami flavor.

MANUFACTURING OF MATCHA
The term matcha literally means "powdered tea" because it is obtained by slowly grinding green tea leaves with a stone mill.
The tea leaves used are young buds as they contain 80% of the antioxidants of the plant. They are hand-harvested, steamed (to stop oxidation), and then dried before being meticulously ground whole.
PREPARATION OF MATCHA
Unlike other teas, matcha is not infused, but whisked. To prepare a bowl of matcha, place about 1 gram of matcha powder into 80 ml of water heated to 75°C. Then, whisk the mixture in a W motion until a fine foam appears on the surface (this can take between 30 seconds and a minute).
